This is me starting from zero and gaining back my This is me starting from zero and gaining back my strength & flexibility. In July 2021, I had shoulder surgery called biceps tenodesis to fix a dislocating shoulder that was causing daily pain. I was misdiagnosed in the Philippines with a rotator cuff tear. Luckily I did another MRI in Sydney and the diagnosis was joint instability and a split in my biceps anchor with calcific tendonitis. Inflammation and pain caused by the loose shoulder. 

I had the best doctors in Sydney who once worked with the Australian rugby team. They fixed my shoulder! My right arm had muscle atrophy and had no strength to even lift a pot. After 6 months of physiotherapy to mobilize the stiff shoulder, I was ready to start building muscle again. I started working with @rebelwithus in Feb 2021 and the results are astonishing. @_katdaroza ’s understanding of physiology and care for my injury made the difference. Our consistent workouts helped me to feel strong all over, with my shoulder 90% back to normal and my entire build looking more toned than ever. All the in the comfort of my own home with minimal equipment!

I was in so much pain after surgery and slept on a stack of 5 pillows for 3 months. I felt so weak and skinny. I was depressed being isolated at home during the peak of the pandemic, not being able bathe myself properly or cook my own food, mostly laying in bed feeling down and crying to my friends on the phone. I had to stop yoga for over a year. Now I feel ALMOST back to normal but extremely grateful for having gone through that horrifying experience of joint surgery. And the best part of it all was my bond with my husband became stronger as he stepped up to take care of me when I couldn’t take care of myself ❤️

I was craving something hearty and nourishing that I was craving something hearty and nourishing that would keep well in the fridge. Nilagang baka or boiled beef is too easy! Bone broth is also good for your gut.

Brisket with beef ribs would have been my choice cut but the butcher insisted I try osso buco. The whole point when choosing a cut for this dish is to pick a cut that becomes more tender when slow cooked like chuck or brisket but adding bones in is important to create a flavorful broth. You won’t normally find garlic in nilaga but I like it with garlic. 

I like to cook in big batches and I store left overs in individual glass containers! Enjoy cooking and let me know how you go! Comment below!

Ingredients:
- 1.3-1.5 kg  osso buco OR beef chuck w/bones OR brisket + ribs
- 8-10 cups filtered water
- 2 white onions, quartered
- 1 garlic bulb, smashed
- 1 1/2 TBSP peppercorns
- 3 medium potatoes, quartered
- 2 plantains, 2 inch cuts
- 1/2 cabbage, quartered
- Handful of green beans
- Bundle of pechay or bokchoy
- Fish sauce to taste - start with 3-4 TBSP then add as much or as little as you like
- Lemon or calamansi for serving
- Brown rice

1. Place beef in pot, cover with water. Boil for 3 mins to remove blood and clarify the broth. Toss the water.
2. Add 8-10 cups water. Beef should be covered by at least 1 inch. Skim the scum with a spoon.
3. Add onions, garlic and peppercorns. Bring to a boil then simmer for 1 hour. Season with 3-4 TBSP fish sauce and partially cover. If beef is not fork tender, continue to simmer for 10-30 more minutes.
4. After 1 hour, add potatoes. Remove onions. Boil for 10 mins.
5. Add plantains.
6. After 5 mins, add cabbage.
7. After 3 mins, add green beans.
8. Add pechay or bokchoy before serving.
9. Serve with brown rice and fish sauce with a squeeze of lemon or calamansi on the side.
